Ingredients (Serves 2)
courgette | 1 pc |
vermicelli | 50 g |
dried king prawn | 8 pcs |
dried scallop | 1 pc |
pork loin | 100g |
ginger | 2 slices |
sesame oil | 1 tsp |
sea salt | A pinch |
Steps
1. Soak dried scallop, dried king prawn, and vermicelli separately in water for 10 minutes.
2. After soaking, tear the dried scallop into shreds. Reserve the water.
3. Halve the soaked dried king prawn. Reserve the water.
4. Slice the pork loin thinly, marinate with half teaspoon of soy sauce, half teaspoon of sugar, and half teaspoon of Shaoxing wine for 15 minutes
5. Slice the courgette into pieces and set aside.
5. Heat oil in a wok, stir-fry ginger slices until fragrant.
6. Add dried king prawn and shredded scallop, stir-fry.
7. Add sliced pork, stir-fry until the color changes.
8. Add courgette and seasonings, cook until the courgette softens.
9. Add vermicelli, stir-fry until it absorbs the sauce.
10. Taste and adjust seasoning with sea salt.
11. Finally, add sesame oil, stir briefly, then serve.
